CHEESE PIE (AKA TIROPITA)

Ingredients:

  • Olive oil
  • 6 eggs
  • 1 lb of feta cheese
  • Almond milk
  • Filo dough
  • Rice

Directions:

  1. Turn the oven on to 350 degrees.
  2. Beat up six eggs.
  3. Add the feta, crumble, and mix.
  4. Add a touch of almond milk.
  5. Set the mix of eggs, feta and almond milk to the side.
  6. Take a pan, and put a thin layer of oil on the bottom.
  7. Then lay a piece of filo dough in the pan.
  8. Dribble some oil on the filo, and spread it over the whole sheet.
  9. Take another piece of filo dough, and dribble a tiny bit of oil onto the sheet.
  10. Add another filo sheet, and dribble oil on it.
  11. Repeat this process until you have used half of the box of filo dough.
  12. Dump the feta/egg mixture into the pan, but leave a little in the bowl for later.
  13. Add a sprinkle of rice to absorb the juices.
  14. Then layer with filo and oil dribbles until you get to the last few sheets.
  15. For the last few sheets, add a little of the feta/egg mixture with the olive oil to the layers.
  16. On the last sheet of filo dough, you will need to disperse a full layer of thin oil over the whole thing.
  17. Cut the cheese pie into squares before you bake it.
  18. Bake at 350 degrees for 20 minutes.
  19. Check the cheese pie.
  20. Let it continue to cook until the top layer is slightly brown.
  21. It should take 20 minutes to an hour to cook.
  22. Let the cheese pie cool for 30 minutes before serving.
