SPINACH PIE (AKA SPANAKOPITA)

Ingredients:

  • Olive oil
  • 5-6 Eggs
  • 2 large bags of spinach
  • 3/4 lb of feta cheese
  • 1 large onion
  • 1 package of filo dough
  • Himalayan, pink salt
  • 1 teaspoon of rice

Spinach Pie

Directions:

  1. Turn the oven on to 350 degrees.
  2. Saute a whole, chopped onion in some oil in a pan. Add spinach and salt.
  3. Mix crumbled feta cheese and eggs in a bowl. Set to the side.
  4. Take a pan, and put a thin layer of oil on the bottom.
  5. Then lay a piece of filo dough in the pan.
  6. Dribble some oil on the filo, and spread it over the whole sheet.
  7. Take another piece of filo dough, and dribble a tiny bit of oil onto the sheet.
  8. Add another filo sheet, and dribble oil on it.
  9. Repeat this process until you have used half of the box of filo dough.
  10. Add the spinach to the feta and egg mixture. Mix all of these ingredients.
  11. Dump the spinach mixture into the pan.
  12. Add a sprinkle of rice to absorb the juices.
  13. Then layer with filo and oil dribbles until you get to the last sheet.
  14. On the last sheet of filo dough, you will need to disperse a full layer of thin oil over the whole thing.
  15. Cut the spinach pie into squares before you bake it.
  16. Bake at 350 degrees for 20 minutes.
  17. Check the spinach pie.
  18. Let it continue to cook until the top layer is slightly brown.
  19. It should take 20 minutes to an hour to cook.
  20. Let the spinach pie cool for 30 minutes before serving.
